So, Katja, you've been doing street food catering for a while now. How long has it been?

I started in october 2013. I have to say we've come a long way, there's been lots of improvements. Our sauce [currywurst sauce that is], for example, has improved over time.

In what way...?

To perfection. When you first start, you know, you make mistakes. You learn every day, you experience new things. You listen to feedback; you grow... and yes, you get ideas, you try new things and we've had lots of good feedback.

I mean we always had good feedback but there's always something different you could do. For example my new recipe [currywust sauce that is]... well, I was never 100% happy with it at the beginning. But I am now; it can't really be improved : )


You you mean that the sauce cannot be improved. Meaning it is as good as it can get?

The curry tomato sauce, yes. I don't think I can make it any better. But what I could do is offer in the future 3 different kinds of curry tomato sauce (in terms of heat, spice heat).


OH , that sounds goood!... tell us more about each one

For example, in Germany (in some places) they offer you: heat number 1, heat number 2 and heat number 3 (and then, in some places they go all the way to heat number 9).

It's not really my thing but I would like to have a couple of choices. I offer now my sauce but if someone asks I offer them chilli flakes. In the future I'd like to have one 'normal' sauce, one 'hotter' and one 'very hot'.


I really didn't know that in Germany there were so many different types of curry tomato sauce!

I said earlier in some places. I think Herman Ze German does it. I think you can go up to heat number 9 (someone told me at my stall) but I'm not really sure.


Will you go and visit to find out?

Hmm... maybe. I was there actually 2 weeks ago. I really fancied a currywurst. I was in Old Compton Street, my fiancee and I had a few drinks, fancied a currywurst and stopped at Herman ze German to have it. But I had medium [spice]. But I think they only offered us 3 different heats.


I think it's incredible that you actually cook this stuff 3 days a week and still you fancy it on one of the days you're not cooking it! AND that you go to Herman ze German to enjoy a good currywurst

Yes, I was very curious again because when we were thinking about the idea of selling currywurst in London we did a lot of research with a few friends. We went to Herman ze German the first time and I was very nervous because I felt shy... All we wanted was to try different currywurst in London to see what it was like.

This time round though I just wanted to try again to see what he does with his sauce and I also wanted to taste the German sausages.


So, what did you think?

Well, the sausage was nice, the chips were nice… but the curry sauce… it's just very different from mine.


Would you ever consider doing something together with Herman ze German?

Yes, I think so. If we're not competing, why not? I always try to get in touch with him.


Back to your topic; what do you think about the street food caterers in the UK?

I think it's a fantastic idea; it's become really popular in London and more and more places are opening.


What sort of places?

For example, Urban Food Festival has been going on for some time now. The Red Market, Food Street, Munch Street.... I don't know, there are so many.

At the moment we're attending the Urban Food Festival. We have a great time there - our product sells really well, people love the authentic Bratwurst sausage. I would also love to attend other food festivals in different areas.


What about the street food catering in London?

Catering? As in which type of food?


Yes.

Oh, my God, there's a guy I was trading next to; Mo's, he does fantastic Korean burgers. I've never tasted anything so nice; there's something very special about it.

Who else… well, Street Pizza is really nice.

Brownie Factory…. They do their own Brownies. OMG, you put them in your mouth and it melts!

Flavours of Portual has one of the best natas I've ever tasted...

And… oh, yes, Kim. She doesn't trade anymore, her vietnamese food is fantastic.

There's so many people,l I can't think about them all. Plus you can't really try everything. On the street food market there are so many burgers, I always look for different kind of food.


What made you bring the currywurst to London?

There is not a lot of street food caterers in London that sell currywurst and Bratwurst. I only new Herman and I come from a place (Berlin) where you find it in every corner.

Also I'm not impressed with English sausages so I think a really nice Bratwurst is must.


And finally, you really add a spark to the street food London scene. How do you achieve this at private events?

Actually we came up with something new. Just going completely German and we just got these speakers... we got a big speaker in our trailer and we play it at the festival. When people pass they get in the mood, dancing, smiling, singing along…. now we are wearing German T-shirts with funny prints on them.
